    5 Tbsp olive oil (preferably extra-virgin)
    2 Tbsp balsamic or red-wine vinegar
    1 tsp each minced garlic, dried oregano and basil, salt and pepper
    4 skinless, boneless chicken-breast halves (4 to 5 oz each)
    2 large tomatoes, halved
    1 loaf (8 oz) Italian bread
    1/4 cup bagged shredded Italian Cheese Blend

    Chopped parsley

    Recipe



    1. Heat barbecue grill. In a gallon ziptop bag, combine 3 Tbsp olive oil, the vinegar, garlic, oregano, basil and 1/2 tsp each salt and pepper. Add chicken; seal bag and turn to coat. Marinate while grill heats (about 15 minutes) or up to 2 hours.

    2. Brush tomatoes with 11/2 tsp olive oil. Halve bread lengthwise; cut each half lengthwise in 4 sticks. Brush with remaining oil; sprinkle with remaining 1/2 tsp each salt and pepper.

    3. Remove chicken from marinade, place on grill and drizzle with the marinade.

    4. Grill chicken, turning once, 10 minutes, until cooked through; bread 4 to 6 minutes, turning until evenly toasted; and tomatoes, cut sides down, 1 minute.

    5. Turn tomatoes over, top with cheese and grill 3 minutes or until cheese melts. Sprinkle chicken and tomatoes with chopped parsley.
