Chicken and mushroom open ravioli

2 tablespoons olive oil
1 tablespoon butter
300g chicken thigh, sliced
1 brown onion, sliced
300g mixed mushrooms, sliced
1 clove garlic, crushed
salt and pepper
2 tablespoons white wine vinegar
1/3 cup chicken stock
½ cup fontina or gruyere cheese
1 packet wonton wrappers
½ cup chopped parsley
Recipe
Preheat oven to 180°C. In a medium frying pan heat 1 tablespoon of olive oil and the butter. Toss in the chicken and brown on all sides. Set aside.
Add the remaining olive oil and toss in the garlic and mushrooms. Cook for 2- 3 minutes and add the white wine and stock. Season well and simmer until liquid has reduced. Stir in the cheese.
Lightly blanch wonton wrappers and layer on each plate with mushroom mixture. Garnish with parsley.
