Country Captain Chicken

List of Ingredients
2 Tbsp all-purpose flour
3 lb chicken, cut in
8 pieces, skin and visible fat removed
1 Tbsp vegetable oil
1 each medium
onion and green bell pepper
1 can (14 1/2 oz) chicken broth
1 can (14 1/2 oz) diced tomatoes with roasted garlic
1/2 cup dark raisins
2 tsp curry powder
3/4 cup uncooked converted long-grain rice
Garnish:
Chopped parsley
Recipe
1. Place flour in a large plastic food bag. Add chicken, close bag and shake to coat chicken evenly.
2. Meanwhile heat oil in a large nonstick skillet over medium heat. Add chicken and cook, turning as needed, 5 minutes or until golden.
3. While chicken cooks, chop onion and green pepper. Push chicken to 1 side of skillet. Add onion and bell pepper to other side and sauté about 2 minutes until lightly browned. Stir in remaining ingredients except rice and bring to a boil.
4. Stir in rice, reduce heat, cover and simmer 20 minutes or until chicken is cooked through and rice is tender. Sprinkle with chopped parsley. Serve immediately.
