    White of 1 large egg
    8 chicken drumsticks (about 2 lb), skin removed
    1 cup finely crushed baked potato chips cheese dip
    1/2 cup reduced-fat sour cream
    3 Tbsp finely shredded Cheddar cheese
    2 thinly sliced scallions
    1/8 tsp salt chili dip
    1/2 cup chili sauce
    2 Tbsp apricot preserves
    1/2 tsp chili powder

    Recipe



    1. Heat oven to 425°F. Line a rimmed baking sheet with foil (for easy cleanup). Spray a large wire rack with nonstick cooking spray and place on lined sheet.

    2. Put egg white in a medium bowl; beat lightly with a fork. Coat drumsticks with egg white, then roll, one at a time, in crushed chips (see Tip). Place on prepared rack.

    3. Bake 40 minutes or until chicken is cooked through and juices run clear when drumsticks are pierced.

    4. Meanwhile prepare one or both dips: Mix Cheese Dip ingredients in a small bowl. Mix Chili Dip ingredients in microwave-safe bowl or small saucepan. When chicken is nearly cooked through, microwave or heat until warm.
