Recipe Introduction
Top servings with a dollop of plain yogurt, if desired
List of Ingredients
1 1⁄2 cups water
3⁄4 tsp salt
1 cup instant couscous
2 carrots, chopped
2 scallions, sliced
1⁄3 cup dried cranberries
1⁄4 cup extra-virgin olive oil
2 Tbsp sherry vinegar
3⁄4 tsp freshly ground pepper
10 1⁄2 oz sliced roast chicken
1 Tbsp thin strips fresh mint
Recipe
1. Bring water and 1⁄8 tsp salt to a boil in a small saucepan over high heat. Stir in couscous, return to a boil, remove from heat, cover and let stand 5 minutes. Transfer to a bowl; fluff with a fork. Stir in carrots, scallions and cranberries.
2. Whisk oil, vinegar, remaining salt and the pepper in a small bowl to blend. Stir into couscous mixture. Transfer to a serving dish; arrange chicken on top. Sprinkle with mint; serve warm.
