1 roasting chicken (61⁄2 lb), giblets reserved for another use, rinsed and patted dry
2 Tbsp unsalted butter, softened
1⁄2 tsp each salt and freshly ground pepper
1 small yellow onion, chopped
2 fresh sprigs rosemary or thyme
Recipe
1. Heat oven to 400F. Oil a wire rack (preferably V-shaped); set in roasting pan.
2. Rub outside of chicken with butter; season inside and out with the salt and pepper. Place onion and rosemary in cavity. If desired, truss chicken, tying legs together with kitchen twine and tucking wing tips under back. Place chicken on its side on rack in pan.
3. Roast 30 minutes. Turn chicken on its other side; roast 30 minutes longer. Turn chicken on its back; roast 45 minutes or until an instant-read thermometer inserted in thickest part of thigh (not touching bone) registers 170F.
4. Transfer chicken to a warmed platter. Cover with foil and let rest 10 to 15 minutes before carving.
