Roast Lemon & Tarragon-Infused Chicken

30 drumsticks
1/2 cup butter
1/4 cup balsamic vinegar
1/3 cup fresh lemon juice
1/4 cup honey mustard
2 tsp. sugar
3 Tbs. fresh tarragon, finely chopped
salt and pepper to taste Recipe
Preheat oven to 350 degrees. Place drumsticks in rows on large baking sheet(s).
In small saucepan combine butter, vinegar, lemon juice, mustard and sugar. Cook over low heat, stirring continually, until butter is melted.
Using a pastry brush, brush each drumstick generously with butter-lemon sauce and sprinkle with salt and pepper. Leave a small amount for final basting.
Bake one hour, covering with aluminum foil if the chicken gets too brown.
Ten minutes before removing from oven, brush chicken with remaining sauce and sprinkle with tarragon. Serve warm or at room temperature.
