1 10-ounce package frozen broccoli or asparagus
spears
12 ounces skinless, boneless chicken breast
halves or turkey breast tenderloins
1 tablespoon cooking oil
1 10- or 12-ounce container Alfredo pasta sauce
4 English muffins or bagels, split and toasted
Recipe
Cook broccoli according to package directions; drain and keep warm. Meanwhile, cut chicken crosswise into 1/2-inch strips. In a large skillet cook chicken in hot oil over medium-high heat for 3 to 4 minutes or until tender and no longer pink (170°F). Drain fat. Stir in pasta sauce. Simmer for 2 to 3 minutes or until sauce is heated through. Place toasted muffin or bagel halves on plates. Arrange broccoli spears on top. Spoon chicken and sauce over all.
