Apple Loaf

Sift together and set aside:
2 cups flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
¼ tsp. nutmeg
In a separate bowl, beat until smooth:
½ cup margarine
1 cup sugar
1 egg
Add and beat well:
1 egg
Stir in:
1 tsp. vanilla
1 cup coarsely shredded apple
Pour into batter:
Flour mixture
½ cup chopped nuts
Stir just until moistened. Scrape into greased loaf pan lined with waxed paper.
Bake at 350°F. for 50-60 minutes or until tested done.
Let stand 10 minutes and then remove from pan.
Notes: 10/98—Looks good. Convection baked at325°F. in glass pan for 55 minutes. Very mild flavor, moist. Two grated apples were too much, but one is not enough.
9/01—Baked in black metal pan at 350°F. for 50 minutes
