Apple Oatmeal Bread

In a large bowl:
1 cup oats
¼ cup brown sugar
2 Tbs. margarine
1-1/2 tsp. salt
¼ tsp. nutmeg
Bring to boil and pour over above. Stir well and cool to lukewarm, ~20 minutes:
1-1/2 cups apple juice
Sprinkle: mix well and let stand for one minute
1 package yeast
Stir in and mix well:
½ cup flour
Stir in:
1 cup flour
Cover tightly with plastic wrap and let stand for 1 hour or until doubled.
Stir down and add:
2 cups flour or enough to make a firm dough that leaves the sides.
Turn out on lightly floured surface and knead 5 minutes or until smooth and elastic.
Shape into loaf and place in greased loaf pan. Cover loosely and let rise 1 hour or until doubled.
Bake at 350°F. for 50 minutes or until top is quite brown. It will not sound hollow when tapped.
Turn out on rack and brush with melted butter.
Yield: 1 loaf
