    Combine and set aside:
    3-1/2 cups flour
    4 tsp. baking powder
    ½ tsp. baking soda
    1 tsp. salt

    In a large bowl, cream with an electric mixer:
    2/3 cup shortening

    Slowly work in with mixer:
    1-1/3 cups sugar

    Add in, beating one at a time:
    4 eggs

    Add dry ingredients alternately with:
    3-1/3 cups mashed banana (~6 bananas)

    Stir in chopped nuts if desired.

    Pour into two greased (and waxed paper lined) loaf pans.

    Bake at 350°F. for 50-60 minutes or until tested done with a toothpick.
    Remove from pan and cool on a rack.

    Yield 2 loaves
