In large mixer bowl, stir to dissolve:
1-1/2 cups warm water
1 package yeast
Stir in to dissolve:
2 Tbs. brown sugar
1-1/8 tsp. salt
Add and knead on #2 for 5 minutes:
3 cups flour
1 cup bread flour
Knead briefly on floured surface until smooth and elastic.
Turn into greased bowl and flip. Cover and let rise one hour.
In an 8x8” Pyrex pan, combine: (leave on warming try to keep warm)
2 cups warm water
2 Tbs. baking soda
After dough his risen, knead briefly and cut into 12 equal pieces. Roll each piece into a 3’ rope that’s pencil thin or thinner. Shape into pretzel shape and dip in soda solution. Place on parchment covered cookie sheets. Let rise 15 minutes.
Bake at 450°F. for 8-10 minutes or until golden brown. Brush with melted butter (keep on warming tray in small Pyrex bowl). Sprinkle with coarse salt, garlic salt or cinnamon sugar.
