Molasses Oatmeal Bread

In saucepan, heat until warm (115°F.-120°F.), stirring constantly:
1-3/4 cups water
1 cup oats
½ cup light molasses
1/3 cup shortening
1 Tbs. salt
Add to large mixer that has:
2 cups flour
2 packages yeast
Add and beat low for ½ minute, scraping constantly:
2 eggs
Beat 3 minutes on high.
Add 3-3/4 to 4-1/4 cups flour, as much of the flour you can mix with a spoon.
Turn onto lightly floured surface and knead in enough remaining flour to make a moderately soft dough that’s smooth and elastic, about 3-5 minutes.
Shape into a ball. Place in lightly greased bowl, flip and cover. Let rise until doubled, about 90 minutes.
Punch down and turn out onto lightly floured surface. Divide dough in half. Cover and let rest 10 minutes.
Grease two loaf pans and coat each with 3 Tbs. oats.
Shape dough into loaves and place in pans, cover and let rise until doubled, about 45-60 minutes.
Brush loaves with:
1 egg white mixed with 1 Tbs. water
Additional oats
Bake at 375°F. for 40-45 minutes. Cover loosely with foil the last 15 minutes to prevent overbrowing. Remove from pans and cool on rack.
Yield: 2 loaves
