    Cinnamon Coffee Cake

    Combine in a large bowl:
    3 cups flour
    1 cup brown sugar, packed
    1 cups sugar
    1 Tbs. cinnamon

    Blend in:
    1 cup margarine, softened

    Reserve ¾ cup for topping and set aside.

    To remaining mixture add and blend until smooth (do not overbeat):
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. vanilla
    2 eggs, beaten
    1 cup buttermilk (or substitute 1 Tbs. vinegar + milk to equal 1 cup)

    Pour into a greased and floured tube pan or spring form pan. Lightly sprinkle with reserved topping over the top.

    Bake at 350°F. for 45 minutes or until tested done. Cool before removing from the pan.

    Note: While baking, the edges rise up and cover the streusel in the middle, making it disappear. Sprinkle streusel closer to the edges of the pan.

    1/1/06 -- Used this recipe to try crown muffin that JBY just gave me. Fill those pans only even with the top of the pan, not too much. Bake at 325°F. for 20 minutes. The rest of the batter went into small 7” springform pan. It’s pretty dense so takes a while to bake, more than 20 minutes.
