    2 Russet potatoes
    1/2 onion
    1 egg
    1/4 cup flour
    Oil
    Salt and Pepper

    Recipe



    Shred:
    2 medium/large russet potatoes (unpeeled)

    Place in large sieve and rinse well with cold water until water runs clear.
    Squeeze out excess water.

    Place in bowl and combine well:
    1 egg (1/4 cup egg substitute)
    ¼ cup flour
    ½ grated onion
    Rinsed and squeeze-dried potatoes

    In heavy skillet, fill ¼” with oil on medium-high heat.
    When oil is hot, place potato into skillet ½” thick. (You can do one large or individual ones.)
    Salt and pepper before flipping.

    Flip when it’s browned (about 5 minutes)

    Drain on paper towels and serve immediately.
