ENCHILADA CASSEROLE
Brown and drain:
1 pound ground beef or turkey
1 medium chopped onion
Add:
1 tsp. salt
1/4 tsp. pepper
1 Tbs. chili powder
8 oz. tomato sauce
Alternate layers of corn tortillas (6-7), meat and shredded cheddar cheese.
Pour 1 cup of water over all.
Cover and bake at 350°F. for 1/2 an hour.
Options: Add some canned corn (drained) and/or black beans (rinsed and drained).
