Peanut Oatmeal Cookies

Cream:
½ cup shortening
½ cup sugar
½ cup brown sugar
Add:
1 tsp. vanilla
1 egg, beaten
Add:
¾ cup flour
1 tsp. baking soda
Add slowly:
1-1/2 cups rolled oats
Add:
1 cup salted peanuts
Drop by teaspoonfuls onto ungreased sheet.
Bake at 375°F. for 10-12 minutes.
Notes: 10/31/01 -- Yield 3-1/2 dozen. Used small cookie scoop. Slightly underbaked them. Pretty crunchy on the edges. Gets crunchier with each passing day. Use margarine next time or half/half shortening and margarine?
