    Mix together and marinate for ½ hour:
    1-1/2 pounds chicken breast, cut into cubes
    1 tsp. sugar
    ¾ tsp. salt
    2 Tbs. cornstarch
    3 Tbs. shoyu

    Sauté chicken in 2 Tbs. salad oil until tender. Remove and set aside.

    Sauté and add to chicken:
    ¾ cup diced zucchini
    1 can sliced water chestnuts
    1 can bamboo shoots

    Add and heat thoroughly:
    1 can chicken broth + 2 tsp. cornstarch

    Serve over hot rice with cashews sprinkled on top.
