Triple Pepper Steak

Marinade:
2 Tbs. oyster sauce
2 tsp. cornstarch
1/2 tsp. black pepper
Add and stir to coat, let stand for 10 minutes:
1 pound flank steak, thinly sliced
Add and stir-fry for 1 minute:
1/2 each green, red and yellow bell pepper, julienned
Add water and stir fry until crisp-tender, 2-3 minutes.
Remove to serving plate
Add 2 Tbs. oil to wok and stir fry for 1-1/2 to 2 minutes each side:

Remove from wok
Remove all but 1/2 tsp. oil from wok, add and stir fry 10 seconds:
1 tsp. minced garlic
1/2 tsp. minced ginger
Add

Sauce:
1/3 cup beef broth
2 Tbs. rice wine or dry sherry
2 Tbs. shoyu
1 tsp. cornstarch
1 tsp. sugar
1/2 tsp. black pepper
Cook until sauce boils and thickens.
Place beef over bell peppers.
