Fried Chicken

Seasoned flour
Combine well in a plastic bag:
1-1/2 cups flour
1 Tbs. garlic salt
1-1/2 tsp. pepper
1-1/2 tsp. paprika
¼ tsp. poultry seasoning
Batter
Combine in a bowl:
2/3 cup flour
½ tsp. salt
1/8 tsp. pepper
Mix together and gradually add to dry ingredients:
1 egg, beaten
¾ cup flat beer or water
Dip boneless/skinless chicken pieces (sliced breast or boneless thighs) in the seasoned flour, then in the egg mixture and then back in the seasoned flour.
Fry until lightly browned and set aside to drain.
Before serving, fry again (this was the trick for crunchy-crispy chicken!)
