Bean Thread Soup

Soak in 3 cups hot water for 15 minutes:
4 bundles of bean threads
Drain and chop into 4” lengths.
Cover to soak in boiling water:
Handful of dried ****ake mushrooms, sliced
Combine and bring to boil:
1 can chicken broth
4 cups water
1 Tbs. shoyu
1 tsp. dashi
Add softened bean thread and drained mushrooms.
Shredded pre-cooked chicken, optional.
Cook 1 minute on medium heat.
Add:
1 Tbs. green onion, chopped
¼ tsp. pepper
1 tsp. sesame oil
Serve hot.
Yield: 4 servings
Notes: I soften the bean thread in a 8 cup Pyrex measuring cup. When softened, I slice right through all the threads with a knife right in the measuring cup before draining.
