Cream of Mushroom Soup

Sauté in a small amount of butter:
8 oz. sliced fresh mushrooms
¼ cup finely minced onion
In a separate saucepan, melt:
¼ cup butter
Add to make a roux:
6 Tbs. flour
Add stirring constantly with whisk until smooth and thickened:
3 cups chicken broth (1-1/2 cans)
Add sautéed mushrooms and cool slightly.
Add:
2 cups milk or Half and Half
1 tsp. salt
½ tsp. pepper
½ tsp. nutmeg
Heat soup just below boiling and serve.
