Recipe Introduction
Maintain the rich flavor of this classic soup by stir-frying the onions in dry sherry and adding a dash of Worcestershire sauce.
List of Ingredients
- 2 medium onions, thinly sliced
- 4 Tbsp dry sherry or non-alcoholic wine
- 4 cups beef broth, fat-free
- 1 tsp Worcestershire sauce
- 4 slices French bread
- 2 Tbsp grated Parmesan cheese
Instructions
- In a large saucepan, combine the onions and sherry and saute for about 6 minutes, or until onions are tender.
- Add broth and Worcestershire sauce. Bring to a boil, then reduce heat and cover and simmer for 10 minutes.
- Meanwhile, toast bread in a 350 F oven until golden brown.
- Place one piece of toast into each bowl, then pour in the soup. Sprinkle 1/2 tbsp grated cheese on top of each serving of soup.
