    List of Ingredients

    PERFECT GLUTEN FREE PIE PASTRY

    1 cup shortening
    1/4 cup butter
    1/4 tsp salt
    2 tsp sugar
    1 tsp baking powder, gluten free
    3 tsp xanthan gum
    1 cup chick pea flour
    3/4 cup soya flour
    11/4 cup white rice flour
    1 egg, beaten
    1/3 cup cold water
    2 tsp white rice vinegar


    Recipe

    Shortening and butter should be at room temperature. Cut all the dry ingredients into shortening until completely mixed.
    Beat egg in small bowl. Add water and vinegar.
    Pour liquid mixture over prepared flour mixture. Mix in with fork until blended. Divide the dough into four equal parts.

    Roll out the dough:

    Sprinkle chick pea flour on sheet of wax paper. Take one equal part of the dough. Sprinkle chick pea flour over dough and gently roll out dough to fit a 9-inch pie plate. Carefully place the rolled dough onto pie plate, using the wax paper to slide onto pie plate.
    This recipe will make 2 double crust pies or 4 single crust shells for your favourite filling. This pie crust does not crumble!
