The Great Pumpkin Muffins

These minimuffins are just right for child-size appetites. For larger portions, make 12 regular muffins.
List of Ingredients
- 2 cups all-purpose flour
- 1 cup firmly packed brown sugar
- 1 Tbs pumpkin pie spice
- 1 1/4 tsp baking soda
- 1 cup canned solis paced pumpkin
- 1/2 cup butter melted
- 2 eggs
- 1 tsp grated oranfe peel
- 1/2 cup raisins
Instructions
- Heat of to 350 degrees. Grease 48 1" to 1 1/4" mini muffin cups with non-stickcooking spray, or line with paper baking cups. In large bowl, combine flour, brown sugar, pumpkin pie spice, and baking soda. Set aside.
- In medium bowl, with wooden spoon, beat pumpkin, melted butter, eggs, and grated orange peel until well blended. Stir in raisins. Pour over dry ingredients and stir until ingredients are just moistened
- Divide better evenly into mini muffin cups. Bake 15 to 18 minutes or until golden brown. Cool muffins in pan on wire rack for 5 minutes.
