celery & Stilton with cream
List of Ingredients
5/6 sticks of fresh Celery (washed )
150 grams stilton (blue ) cheese
50mls of fresh double cream
1teaspoon salt
1teaspoon black pepper
500mls veg stock (prepared in advance )
parsley (freshly chopped )
2 table spoons virgin olive oil

I like to think of myself as a natural " Cook " and so my first choice must be and can only be "Celery & Stilton "
and so quick and easy : wash and chop the Celery put the olive oil in a shallow frying pan (heat slowly )when the oil is hot turn off the gas add the chopped Celery and fry it for 5 minutes after the first minutes reignite the gas and fry for 5 minutes more.
Now the veg stock as mentioned is easy to make in advance and is made up of the following : 400 mls spring water (bottled ) 1 tomatoe, 1 carrot, 1 onion , 1leek, 1 potatoe
salt (only) and a tea spoon of mixed spice.chop all and add to the water and bring to the boil remove the vegetables
and blend return to the pan of water and strain straight
away use the stock for the soup .
using a large copper bottomed pan put the stock the fried
cerlery add the pepper salt and stilton bring up the heat but do not boil for 10 minutes remove from heat add fresh cream and serve last touch add the parsley to each setting.
