Recipe Introduction
Billy Joe Tatum and Ann Taylor Packer published one of the best recipe books I have come across yet. So I would like to share some of their Ozark recipes. This one reminds me of Apple Butter making Days in Mt. Vernon, Missouri in the fall. As you look at the booths of arts and crafts and think of all the quilts being auctioned, your nose fills with the smell of cooking apple butter.
List of Ingredients
- 7 quarts tart apples, cored and quartered
- 1/2 cup white vinegar
- 1/4 cup water
- 2 cups white sugar
- 1 cup brown sugar
- 1 teaspoon cloves
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 teaspoon allspice
- 1 teaspoon salt
Instructions
- Cook apples in vinegar and water over low heat until tender, run through sieve to remove skins.
- Combine with remaining ingredients and simmer five minutes.
- Pack in hot, sterile jars and seal.
Final Comments
This recipe is great in the cold mornings as the first snowflakes spin through the air.
