1/2 cup butter,softened
1 cup sugar
1/4 tsp. vanilla
1 egg
2 cup flour
4 tsp. baking powder
1/4 tsp. salt
1 cup milk
2 cups diced fresh rhubard
Recipe
Preheat oven to 400 deg. Grease a 12-muffin tin. Beat butter and sugar until smooth and light in a medium-size bowl.Add egg and mix well until blended.
Sift together the flour,baking powder and salt.Add half the flour mixture to the egg mixture and partially blend.
Mix in half the milk.Add the remaining flour mixture and the milk all at once and fold in with a rubber spatula just until the batter comes together.It will be lumpy.
Fold in the rhubard until evenly distributed.Fill the muffin tin 3/4 full with the batter.
Bake for 30 minutes or until a toothpick inserted in the middle of one muffin come out clean.Cool for 5 minutes before serving.
Make 12 muffins.
