Pickles Beets

3 quart,cooked small beets
2 cups sugar
1 tbsp. whole allspice
1 1/2 tsp. salt
2 sticks cinnamon
3 1/2 cups vinegar
1 1/2 cups water
Recipe
To cooked beets,first wash,drain.Leave 2 inch of stems and taproots.Cover with boiling water and cook until tender.Combine all ingredients except beets; simmer for 15 minutes.Pack beets into hot sterilized jar,leaving 1/2 inch headspace.(Cut larger beets in half if necessary).Remove cinnamon sticks.Bring liquid to boiling.Pour boiling hot over beets,leaving 1/2 inch headspace.Seal and process in hot water bath for 30 minutes.
Yield about 6 pints.
Notes: I have never use the hot water bath process and never had a problem.
