    1 2-layer white cake mix
    4 egg whites
    1 cup water
    1/3 cup oil
    1 small pkg. coconut cream instant pudding and pie filling
    1 tsp. almond extract
    1 cup butterscotch chip
    1 tub creamy white frosting
    2 tbsp. butterscotch chips( for garnish
    2 tbsp. chopped nut for garnish

    Preheat oven to 350 deg.Grease and floured lightly 2 round layer cake pan.
    Blend cake mix,egg whites,water,oil and coconut pudding in a large bowl at low speed until moistened.Beat at med. speed for 2 minutes.
    Add almond extract and butterscotch chip to the batter.Stir until blended.
    Pour batter into cake pan and bake immediately.
    Bake cake for 25-30 minutes or until toothpick come out clean.
    Cool in pan for about 15 minutes.Remove from pan and cool completely before frosting.
    Place one cake layer on a serving plate.Spread frosting on top to within 1/4-inch of edge.Place second layer on top. Frost top and sides of cake with remaining frosting.Sprinkle butterscotch chip and chopped nut over the top of cake immediately after frosting.
