    Oatmeal and Raisin Muffins

    1-1/4 cups flour
    1 cup rolled oats
    1/2 cup raisins
    1/4 cup dark brown sugar
    3 tsp. baking powder
    1/2 tsp. salt
    3/4 tsp. cinnamon
    1 cup milk
    1/4 cup oil
    1 egg

    Recipe



    In large bowl, combine flour, oats, raisins, sugar, baking powder,
    cinnamon and salt; set aside. In small bowl, beat remaining
    ingredients until well blended. Pour into flour mixture and sitr
    just until moistened (batter will be lumpy). Divide among 12 greased
    or paper-lined 2-1/2 inch muffin cups. Bake at 400 degrees for 20-25
    minutes, or until toothpick inserted in center of muffin comes out
    clean. Remove from pan and cool on rack. Wrap in plastic wrap or
    sandwich bags. Will keep 2 to 3 months when frozen.
