    St Patty's Day Cupcakes

    List of Ingredients


    • 1-3/4 cups all purpose flour
    • 1-4 oz instant pistachio pudding mix
    • 3/4 cup mini chocolate chips
    • 2/3 cup sugar
    • 2-1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 cup mini chocolate chips
    • 2 eggs, beaten
    • 1-1/4 cups milk
    • 1/2 cup cooking oil
    • 1 teaspoon vanilla
    • 1/2 can cream cheese frosting
    • green colored sugar


    Instructions


    1. Grease muffin cups set aside. In a large bowl stir together flour, pudding mix, the 3/4 cup chocolate chips, sugar, baking powder and salt. In a small bowl combine beaten eggs milk, oil and vanilla. Stir into flour mixture. Fill cups 2/3 full and bake in 375 degree preheated oven for 18 to 20 minutes. Frost with cream cheese frosting and sprinkle with green sugar and 1/2 cup of mini chocolate chips.
