    Chicken Quesadilla & Fiesta Rice

    I substitued the can of rotel diced tomatoes and chiles for salsa.


    List of Ingredients


    • 1 lb. boneless chicken breast, cubed
    • 1 can cheddar cheese soup
    • 1/2 cup water
    • 2 cups minute rice
    • flour tortillas
    • 1 can chicken broth
    • 1 can rotel diced tomatoes and chiles


    Instructions


    1. Fiesta Rice: Heat one can of chicken broth, 1/2 cup water, 1/2 cup Rotel in a sauce pan til the mixture boils. Stir in 2 cups uncooked rice. Cover and remove from heat. Let stand 5 minutes, fluff with fork.
    2. Quesadillas: Cook chicken in non stick skillet until done and juices evaporate, stirring often.
    3. Add cheddar soup and remaining Rotel heat thoroughly.
    4. Spread 1/3 cup soup mixture onto half of tortilla. Fold over and seal with water. Place tortillas on baking sheet. Bake 5 minutes or until hot, serve with fiesta rice.
