List of Ingredients
- 1 bag white rice
- non stick cooking spray
- 1 can (10 ounce) RoTel Original Diced Tomatoes & Green Chiles, undrained
- 1 lb browned ground beef
- 4 cups crushed tortilla chips
- 1 can (15 ounce) seasoned pinto or chili beans
- 1 lb pasteurized prepared cheese product, cut into cubes, divided
- sliced green onions and sour cream, optional
Instructions
- Prepare rice according to package directions; set aside.
- Preheat oven to 350 degrees. Spray a 13x9x2 inch baking dish with cooking spray. In a medium bowl, combine rice, rotel and garound beef; set aside. Cover baking dish bottom with chips. Layer half of the cheese over the chips. Top with beans and rice tomato beef mixture. Top with remaining cheese. Bake, uncovered for 15 minutes or until cheese is melted. Garnish with sour cream and green onions, if desired.
