    Macaroni Salad

    List of Ingredients


    • 1 box macaroni, boiled & drained
    • 2 small cucumbers, chopped
    • 6 eggs, boiled
    • 1/3 cup sandwich spread or mayo
    • 1 teaspoon vinegar
    • 2 small green peppers, chopped
    • 2 small tomatoes, chopped
    • 1 small onion, chopped
    • 1 jar coleslaw dressing
    • 1 tablespoon mustard
    • 1/4 cup sugar


    Instructions


    1. Boil eggs, cool and peel. Chop and place eggs in a large bowl. Boil macaroni according to package directions. Drain and rinse with cold water. Add macaroni to chopped peppers, cucumbers, onion, tomatoes and eggs.

    2. For the sauce: Mix together 1 jar coleslaw dressing, 1/3 cup sandwich spread or mayo, 1 tablespoon mustard, 1 teaspoon vinegar, and 1/4 cup sugar. Stir til well blended. Blend half of the sauce mixture reserving half in with the vegetable egg mixture. Let salad set overnight in the refrigerator. Before serving stir in reserved sauce.
