BUTTERSCOTCH BREAD

Recipe Introduction
Two loaves of nut-rich, golden quick bread, one to serve, one to save - or give. Preparation time: 20 min Baking time: 40 min; Yield: 24 servings (2 loaves)
List of Ingredients
4 cups all-purpose flour
2 cups firmly packed brown sugar
2 cups buttermilk*
2 eggs
3 tablespoons Butter, melted
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup golden raisins or chopped nuts Recipe
Heat oven to 350°F. Grease bottoms only of two 9x5-inch loaf pans. Set aside.
Combine all ingredients except raisins in large bowl. Beat at low speed, scraping bowl often, until well mixed. Stir in raisins by hand.
Spoon batter evenly into prepared loaf pans. Bake for 40 to 50 minutes or until toothpick inserted in center comes out clean. Let stand 10 minutes. Remove from pans. Cool completely.
*Substitute 2 tablespoons vinegar or lemon juice and enough milk to equal 2 cups. Let stand 10 minutes.
