Caramel Apple Oven Pancake

5 Tbsp. butter
6 Tbsp. brown sugar
1/2 tsp. cinnamon
1 cup baking apples, thinly sliced (1-2 apples)
1 cup flour
1 Tbsp. sugar
1 tsp. baking powder
1/2 tsp. baking soda
dash salt
1 cup buttermilk
1 egg
3 Tbsp. melted butter Recipe
Preheat oven to 400ºF. Spray 9-inch pie pan or baking dish with nonstick spray.
In small saute pan, melt butter and add brown sugar. Cook on medium high until sugar melts, about 4 minutes, stir in cinnamon. Pour into prepared pan. Peel apples and slice. Pour caramel mixture in prepared dish and arrange apple slices evenly on top. Set aside.
In medium bowl measure flour and add sugar, baking powder, baking soda and salt. Sift together. Add buttermilk and egg and whisk until blended. Stir in melted butter. Pour onto caramel and apples in the pan covering evenly.
Bake for 25 minutes or until golden brown on edge. Remove from oven and let sit for 10 minutes. Invert onto aserving dish.
Serves 4.
