Company loves this! This is great for brunch or a luncheon when served with fresh fruits. Great for dinner too when served with a simple green salad.


List of Ingredients




3C shredded potatoes /or "Simply Potatoes" in refrigerator section

3/4 C Montery Jack cheese w/ jalapenos, shredded

1 C fully cooked ham, diced

1/4 C green onion, sliced w/ tops

4 large eggs, slightly beaten

1 1/2 C 2% or whole milk

1/4 t ground pepper

1/8 t salt (opt)

Recipe



Preheat oven to 350°

Spray round casserole or pie plate with nonstick spray

Arrange potatoes evenly in the bottom of the casserole

Sprinkle with cheese, green onions & ham

Combine eggs, milk, salt and pepper over potato mixture

Bake uncovered for 40-45 minutes until center is set and inserted knife comes out clean.

Let rest for 5 minutes before slicing.
