3 C. Sugar
1/2 C. Cocoa
pinch salt
1 T. Corn syrup
1 1/2 C. Milk
1 stick Butter
Recipe
Combine sugar, cocoa, & salt in lrg. pot. Add the milk and corn syrup. Cook and stir over med/high heat. Bring to a full rolling boil. It has to boil rising up in the pan then turn the heat down to medium and let it boil back down.
Cook to hard ball stage (when tested in cold water,it should be firm, but plyable-hold it's shape when you let go of it-will feel slightly hard on the outside of the ball).
Once it has reached this stage, place pan and all in your kitchen sink that has about 1/3 full of cold water in it.
Now add the stick of butter to it and let cool slightly. (butter will almost be melted).
Put the whole mixture into a mixing bowl and beat it w/electric mixer untill it loses it's gloss. (Have a peice of foil buttered ahead of time) Add nuts if desired and put out onto buttered foil and form into 2 logs. Let set and cool.
