Fresh Ripe Tomatoes
Salt
Sterilized Quart JarsRecipe
Wash tomatoes.
Scald in boiling water long enough to be able to remove peel easily-about 1/2-1 minute.
IMMEDIATELY plunge into cold water. Peel, core and pack into hot sterilized jars. Add 1 t. salt to each qt. jar if desired. Fill to within 1/2" of top of jar, gently pressing down while packing to make its own juice. ADD NO OTHER JUICE. Put on caps and bands and water bath for 10-15 minutes.
***When you remove jars from the water bath, don't forget to listen for the "Pops" of the lids ensuring that your jars have properly sealed.***
