Pumpkin Pecan Pie Bars

List of Ingredients
1 cup all-purpose flour
1/2 cup old fashioned or instant oats
3/4 cup packed brown sugar (divided use)
1/2 cup butter
3/4 cup granulated sugar
1 (15 oz.) can pumpkin
1 (12 oz.) can evaporated milk
2 large eggs
2-1/4 teaspoons pumpkin pie spice
1/2 cup chopped pecans
Recipe
Combine flour, oats, 1/2 cup brown sugar and butter in a small mixer bowl. Beat at low speed 1 to 2 minutes or
until crumbly. Press on bottom of ungreased 13-by-9-inch baking pan.
Bake at 350º for 15 minutes.
Combine granulated sugar, pumpkin, evaporated milk, eggs
and pumpkin pie spice in a large mixing bowl. Beat at medium speed 1 to 2 minutes. When crust is done, pour this mixture over it and bake another 20 minutes
Combine pecans and remaining 1/4 cup brown sugar in a small bowl. Sprinkle pecan topping over pan. Bake another 15 to 25 minutes, or until a knife inserted in the center comes out clean. Cool completely in pan on wire rack.
Cut into bars. Makes 12 large bars or many small bars. These bars are delicious served as is, OR topped with whipped cream.
