1/2 C. Sugar
6 T. Butter
1 Egg yolk, well beaten
1 C. crushed Pineapple, drained
angel flake Coconut
1/2 C. chopped Nuts
30 Vanilla wafer cookies
1 pint Whipping Cream OR Cool whip
1 Egg white, stiffly beaten
pinch salt
Recipe
Cream sugar and butter untill light and fluffy. Add egg yolk, pineapple, and nuts.
Beat egg untill stiff with salt and then fold in lightly to above mixture.
For each "snowball", take 3 cookies and spread the mixture in between each cookie, but not on the top. Stack them together. Place in baking sheet and let sit in the fridge for 4 hours or overnight.
Sweeten cream and beat till stiff peaks (if using fresh whipping cream) or use thawed cool whip and spread all over each stack of cookie doing the sides first. Sprinkle or roll lightly in coconut.
Let sit in fridge another 3-4 hours before serving.
