1- 16 oz pkg. frozen vegetable medley (cauliflower, brocolli, and carrots) Thaw and drain.
1 sm. can mushrooms, drained
1 sm. onion, chopped
dash garlic salt and pepper
2 C. shr. cheddar/Monz. mix ( I use 2%)
1/2 t. dried basil
2 C. chopped ham (I use 99%ff)
6 eggs
4 T. butter
1/2 C. grated parmesean cheese (in the can)

Spray 9x13' pan or 2 pie pans w/ pam type product.
In lrg. skillet, saute' onions,veg. mix, mushrooms in the butter w/garlic salt for 5-7 min. In lrg. bowl, beat eggs, add ham, cheese, seasonings and veg's. Mix well. Pour into prepared pan. Bake at 350' for 45-55 min. or set and golden brown.
You could easily tweak this to be weight watcher friendly.
