    Recipe Introduction

    I LOVE "carnita" meat from CHIPOLTE! I like to have it over rice flavored with fresh cilantro and lime, with; cheese, sour cream, pinto or black beans, fresh tomato salsa! YUM YUM YUM-MY FAVORITE!!!

    List of Ingredients

    One 3/4-pound chuck roast
    One 7-ounce can green chilies
    2 Tablespoons chili powder
    1/2 teaspoon oregano
    1/3 teaspoon cumin
    2 cloves garlic minced
    1/2 teaspoon onion powder
    Salt to taste

    Recipe

    Place roast on large piece of heavy duty aluminum foil or several sheets regular foil. Combine remaining ingredients in a bowl and then spread on top of meat. Wrap and seal foil securely. Place in oven-proof dish for 4 to 4 1/2 hours at 300°. Cook longer if necessary; meat should be so tender it falls apart. Shred meat with a fork and add juices; offer warmed flour tortillas. Serves 10-12.
