Recipe Introduction
This version is "Hunan Style". This is our favorite Lemon Chicken recipe.
List of Ingredients
3 large Chicken Breasts, cut into halves, and then chunks
Veg. Oil
1/4 C. Flour
1/4 C. Water
1 Egg
2 T. cornstarch
2 T. Veg. oil
1 t. Salt
1 t. Soy sauce
1/4 t. Baking Soda
Lemon Sauce - see recipe below
1/2 Lemon, thinly slicedRecipe
Heat oil 1-1 1/2" deep to 360'.
Beat remaining ingredients (except Lemon sauce and lemon slices) with hand beater until a smooth batter. Dip chicken pieces one at a time into the batter and then deep fry several at a time until golden brown, turning once, drain on paper towels.
Arrange on a heated platter and keep warm till all pieces have been cooked. Prepare the Lemon sauce and pour over chicken and serve over rice and pea pods on the side. Garnish with lemon slices if desired.
LEMON SAUCE;
1/2 C. water
1/2 t. grated lemon peel
1/4 C. lemon juice
1/4 C. honey
1 T. ketchup
1/2 t. instant chicken boullion
1/2 t. salt
1 clove garlic, finely chopped
1 T. cornstarch
1 T. cold water
Heat 1/2 c. water, the lemon peel, lemon juice, honey, ketchup, boullion, salt and garlic to boiling. Mix cornstarch with the cold water; stir into sauce. Cook until thickened, about 30 seconds.
