    Recipe Introduction

This sizzling steak fajita recipe will have you coming back for more. Simple yet tasty.

    List of Ingredients

    2 T fresh lime juice

    6 cloves of garlic, minced

    1 bottle of beer

    1 1/2 tsp chili powder

    1/4 cup brown sugar, packed

    1 tsp ground cumin

    1 tsp oregano leaves

    3 green onions, finely chopped

    1 jalapeno, seeded, and minced

    3/4 tsp sea salt

    1/3 cup olive oil

1 T fresh cilantro, chopped (optional)

1 to 1 1/2 lbs skirt steak, trimmed of fat, figure 1/4 to 1/3 lb per person

1 large or 2 medium yellow onions, peeled and cut in half and thinly sliced

2 large bell peppers, one green and one yellow or red, seeded and cut into thin slices

6 to 8 flour (8") or corn tortillas

    Condiments:

    guacamole

3/4 lb of shredded mild cheddar cheese

    pint of sour cream

    salsa

    Recipe

Take a plastic ziplock bag and add the first 12 ingredients and mix them well. Then add the steak. Don't slice the meat; large pieces are easier to grill. Place the bag in the refrigerator overnight.

Take meat out of refrigerator to bring to room temp. Place onion and bell peppers in a bowl and toss with 1 T olive oil.

Heat grill. Place steak on grill.

Add a teaspoon or 2 of olive oil to a cast iron skillet and heat on high. When the pan is hot, add the bell pepper and onion. Add a sprinkle of sea salt. Cook till veggies are translucent. Stir occasionally but let them brown a bit. Keep warm in the pan.

When steak comes off grill, let it rest on cutting board while you heat tortillas either in oven or microwave.

Slice steak into thin strips across the grain and place in warmed dish or bowl. Serve with peppers, onions, tortillas, and condiments
