    Recipe Introduction

While living in England we fell in love with this local favorite!

    List of Ingredients

Vegetable Oil (enough for deep frying)

4-5 Potatoes, cut lengthwise into 1/2" pieces
1 lb. fish fillets (Cod or Haddock),cut into 2x1 1/2"pieces
    2/3 C. all purpose Flour
    1/2 t. Salt
    1/2 t. Baking Soda
    1 T. Vinegar
    2/3 C. Water
    Malt Vinegar and Salt

    Recipe

Heat oil (2-3") in deep fat fryer to 375'.
Fill the basket 1/4 full with potatoes; slowly lower into the hot oil. (If oil starts to bubble excessively, raise and lower the basket several times till it settles down)
Use a long handled fork to keep potatoes separated, fry until golden (5-7 minutes). Drain and keep in a single layer on a cookie sheet, keeping warm.

Pat fish dry w/ paper towels.
Mix flour and 1/2 t. salt. Mix baking soda and 1 T. vinegar and stir into the flour mixture; beat intil smooth.
Dip fish into the batter allowing the excess to drip back into the bowl. Fry 4-5 pieces at a time until brown, turning once. About 3 minutes. Drain on paper towels.

Set oven to "broil" and broil the potatoes 6" from the heat until crisp, 2-3 minutes. Plate with the fish and sprinkle with malt vinegar and salt. ENJOY!

*** Do not use basket to cook the fish in***

opt.; If you wish you can also add a beaten egg to the batter mixture.
