    Very rich and very tasty! Great for an elegant dinner.

    List of Ingredients




    Crepe's (see recipe below)

    6 med. mushrooms, chopped
    3 T. chopped green onion
    3 T. butter/marg.
    3 1/2 C. (about 18 oz.) cooked seafood, cut into bite size pieces. (I like to use Crab, Lobster, Shrimp or a combination of all 3)
    3 pkgs. (3 oz. each) cream cheese, cubed
    1/3 C. half and half
    3 T. snipped parsley
    2 T. sherry (opt.)
    1 C. shredded swiss cheese
    1/4 C. ch. green onion

    Recipe



    Prepare crepe's; keep covered to prevent drying.

    Cook and stir mushrooms and 3 T. gr. onion in butter till onion is tender. Stir in the seafood, cream cheese, half and half, and parsley. Cook, stirring constantly, until cream cheese is melted. Stir in sherry.

    Place about 1/4 C. filling in center of each crepe'; roll up. Place 8 crepes seam sides down in 2 ungreased oblong baking dishes, 12x7 1/2x2", or ovenproof serving platters. Sprinkle each with 1/2 C. swiss cheese. Cover and heat in 350' oven untill hot, about 20 minutes. Garnish with chopped gr. onion.

    CREPE'S-

    2 1/4 C. all purpose flour
    1/2 t. salt
    1/2 t. baking powder
    3 C. milk
    3 eggs
    2 T. butter/marg., melted

    Mix dry ingred., stir in milk , eggs, and butter. Beat with hand beater until smooth. For each crepe, lightly brush 8" skillet with butter/marg., heat over med. heat untill bubbly.Pour a scant 1/4 C. batter into skillet; immed. rotate skillet until a thin film covers the bottom. Cook until top is dry and bottom is light brown, turn. Cook other side til light brown. Remove from skillet and let cool. Stack with waxed paper between each crepe and cover with plastic wrap to prevent drying out.
