I'm not a fan of fruit cake. This is a GREAT alternative!


List of Ingredients




6 Eggs
1-lb. Butter
1 lb.+ 1 C. Brown sugar
5 1/2 C. Flour
2 t. B. powder
2 t. Vanilla
3 boxes DATES- cut and pitted
juice of 1 Lemon
1/2 lb. chopped walnuts
2 t. Cinnamon

Recipe



Roll dates and nuts in 1/2 C. of the flour and set aside.

Cream butter and flour till smooth. Add b. powder,and set aside.
In separate bowl, beat egg yolks and br. sugar. Beat egg white till fluffy. Combine; flour mixture, yolk mixture, and then fold in the egg whites. Add lemon juice, dates, nuts, vanilla, and cinnamon. Bake in a greased and floured tube pan at 350' for about 1 1/2 hours.
