    I make these every Christmas and give away as gifts to friends/family/neighbors. Slice and serve on crackers with cheese. EXCELLENT!!!

    List of Ingredients




    5 lbs. Hamburger
    5 T. Morton's Tender Quick (Do NOT Substitute)
    1 1/2 t. Garlic Powder
    2 1/2 t. Course or cracked peppercorns
    2 t. Smoked Salt
    2 1/2 t. Mustard Seeds

    Recipe



    Place hamburger in lrg. mixing bowl and set aside.

    In sm. bowl, combine; remaining ingredients (spices)
    Gradually add these to the Hamburger, mixing well with your hands. Cover and place in the fridge for the next 3 days.

    Remove once a day and knead the mixture as you would knead bread dough, for about 10 min each time. Return covered to fridge.

    On the 3rd day, remove from fridge, knead well and divide into 5 equal portions. Roll each portion into a log about-8-9"long and 2 1/2-3" diameter. Place the logs on broiler type pan on lower rack in the oven and bake at 150' or your lowest setting close to that for 8 hours, Turning every 2 hours.
    When finished, remove and let cool on paper towels.
    Wrap in foil wrap and store in fridge or freeze.
